This is a simmered squid dish using Veggie Maria’s frozen vegetables. Since the eggplants are fried and then rapidly frozen, using them in the simmered dish enhances the flavor and makes it even more delicious. You can also make it with octopus or white fish instead of squid. (Ingredients for two people)

Veggie Maria Cherry Tomato Halves | 150g |
Squid | 1 |
Garlic | A clove |
White wine | Tbsp 2 |
consomme | 1 Piece |
Salt and Pepper | Appropriate amount |
Olive Oil | Tbsp 1 |
Parsley | Appropriate amount |
How to make
- Finely chop the garlic. Cut the squid into rings.
- In a pot, add olive oil and heat. Sauté garlic until fragrant. Add the squid and sauté, then deglaze with white wine.
- To the pot, add frozen fried eggplant and frozen cherry tomatoes, and consommé. Simmer on low heat for 5 minutes. Finish by seasoning with salt and pepper to taste.
