How to make
- Season the chicken thighs with salt and pepper, then set aside.
- Heat oil in a frying pan and sear the marinated chicken on both sides until golden.
- Add butter to the same pan used in Step 2. Once melted, incorporate frozen lemon slices, salt, and pepper, and simmer on low heat. Meanwhile, microwave the frozen spinach.
- To serve, arrange the chicken on a plate, drizzle with the lemon butter sauce from Step 3, and accompany with the spinach and halved cherry tomatoes.
